Owner and executive chef Greg Cole opened Celadon restaurant in the fall of 1996 and has since been considered a local favorite in downtown Napa. Celadon is a cozy neighborhood restaurant serving innovative and eclectic 'global comfort food'. "In San Francisco, there are all these great little restaurants on the corner," Cole says. Trevor Eliason

As a young boy growing up in Northern California, Trevor got an early start in the culinary world. He would watch his grandmother cook and admire how she made everything from scratch. After graduating from high school, it came as no surprise when he enrolled in the renowned Le Cordon Bleu Program at the Western Culinary School in Portland, Oregon. Trevor returned to Northern California shortly after completing the culinary program at the top of his class.

His first full-time position was Pastry Chef at the celebrated French bistro, Bouchon, in Yountville. From there, he moved to the East Bay to run the kitchen at Va da Vi, a lively wine bar where his brother is still the Wine Director. It wasn’t long before Trevor moved back to the Napa Valley and was hired as the Executive Sous Chef at Angéle Restaurant in downtown Napa. He now runs his own catering company and enjoys selecting wines to pair with his cuisine.

Trevor refers to his style of cooking as Northern California Cuisine. In his words, it means “local, coastal, seasonal, and refined fare.” He carefully selected dishes that are suitable to enjoy in the Spring time. And most importantly, he crafted these recipes to compliment the wines in your Wine Club shipment. We hope that you will have fun recreating these recipes in your own home.

Ken Tominaga's 16-seat sushi and sake bar is the centerpiece of Cindy Pawlcyn's casual, new West coast-style fish restaurant. Freshness is paramount with fish flown in daily and a Go Fish organic garden out back to augment regional farm produce. Cindy and partner Sean Knight deliver an expansive menu and wine list in the warm and welcoming dining room they created with architect Howard Backen. Patio seating is available when weather permits.

JoLe is a Contemporary American Restaurant owned and operated by husband-and-wife team Matt and Sonjia Spector, chef and pastry chef, respectively. JoLe is the couple’s second restaurant venture. The first was the wildly successful, Matyson Restaurant in Philadelphia. "After four wonderful years at Matyson, we were eager for our next challenge, and Northern California was calling. We sold the restaurant, packed up the kids, and headed west."

"We happily landed in the quaint wine and spa town of Calistoga, enjoying the bounty of ingredients that the area has to offer." Matt uses organic, locally farmed ingredients as much as possible. Sonjia’s desserts are updated versions of things her mom and grandmother made. The wine list is eclectic and ever-evolving, consisting of many small producers.
